About Us

Hi! We’re Katie and Chuck Heveron, Lancaster, NY residents and the owners of Symposium Wine Bar.

Symposium was born out of the desire to provide our neighbors with a space to gather, drink good wine and eat good food in a comfortable atmosphere. We’re really excited to be a part of the Village of Lancaster’s growth!

We offer a rotating menu of wines we hope you’ll find interesting and delicious, accompanied by bistro-style small plates. We’ll also be serving up select craft cocktails, mocktails and a variety of local beer, as well as Sunday brunch. Partnering with local companies who put as much love into their products as we do in our space, is important to us.

We’ve both spent a lot of time working in the food industry– Chuck in operations and management, and Katie in public relations and crisis communications. Katie has a passion for the wine industry, is a home winemaker and holds certifications through the Wine and Spirits Education Trust (WSET).

We’ve also brought together a really great team and we can’t wait for you to get to know them!

Ultimately, we’re here to encourage you to try new things. We’re here to listen, learn and guide you on your journey to your next favorite wine.
